The heat of the summer has inspired this fresh fennel-kraut: local white cabbage, fennel root, carrot, onion, garlic, and a little ginger.
Fermented over a week, we check on it daily and nurture it as needed. Thanks to this fermentation, our fennel-kraut is packed with naturally occurring probiotics. They are said to contribute to our gut flora, just like a good compost contributes to the soil. It is all about the terrain, as this will determine what grows.
