Og Daikon Kimchi (*)
After rescuing a ton of daikon radish from one of our local grocery stores on Gozo, we were inspired to give this kimchi a go! We also decided to throw in one of Ferment Island's upcycled spice powders for this spicy & gingery kimchi!

The unassuming daikon radish—along with its cousins, the black or red radish—has long been considered a superfood in many Asian cultures. It is known to have an unremarkable ability to rebalance the digestive system, boost the immune system and gently cleanse the body.
Kimchi is packed with naturally occurring probiotics, which are known to support digestion & boost the immune system. Kimchi is a great side dish for a variety of meals. In Korea, the country of origin they eat a small amount at every meal to aid with digestion.
To get all the probiotic benefits, kimchi is best consumed raw, although you can also cook with it. Stir fried kimchi rice is amazing! You can add to soups, curries and stews too for an extra kick!
Keep in the fridge! Kimchi keeps for up to 4-6 months no problem, although the flavour will evolve and get sourer over time.
