Amatriciana Pasta Sauce (*)
Named after Amatrice, a mountain town in Lazio, Amatriciana is one of the region's most famous pasta dishes, along with Gricia, Cacio e pepe, Arrabbiata and Carbonara.
This very traditional Italian pasta sauce is originally based on guanciale, pecorino romano cheese, tomato, white wine and onion. It takes its spiciness from black pepper and dried chiles and its depth of flavour from the "guanciale", high quality cured pig jowl, with much more flavour than other cured meats.
If you've been in Rome, you must know it. If you don't, you must try it!
